Vinification of the Domaine de Chevalier Pessac-Léognan Rouge This powerful red wine from France is vinified from the grape varieties Cabernet Franc, Cabernet Sauvignon, Merlot and Petit Verdot. The grapes grow under optimal conditions in Bordeaux. The vines here dig their roots deep into soils of clay and gravel. Pessac-Léognan Rouge is an Old World wine in the best sense of the word, as this Frenchman exudes an extraordinary European charm that clearly underscores the success of Old World wines. When perfect physiological ripeness is assured, the grapes for Pessac-Léognan Rouge are harvested exclusively by hand without the aid of punishing and barely selective grape harvesters. After the hand harvest, the grapes are immediately taken to the press house. Here they are selected and carefully crushed. Fermentation then takes place in small wood at controlled temperatures. After the completion of fermentation, the powerful Pessac-Léognan Rouge is aged for another 16 months in oak barrels.
