When perfectly ripe, the grapes for Zweigeltrebe are harvested exclusively by hand without the help of coarse and less selective machines. After the harvest, the grapes are immediately taken to the winery. Here they are sorted and carefully broken up. This is followed by fermentation in stainless steel tanks at controlled temperatures. Once fermentation is complete, the Zweigeltrebe is allowed to further harmonize on the fine lees for several months.
