The grapes grow under optimal conditions in the Valle Central. The vines here dig their roots deep into soils of clay and sand. When they are perfectly ripe, the grapes for the Escudo Rojo blend are harvested exclusively by hand without the help of coarse and less selective machinery. After the harvest, the grapes are taken to the press house by the fastest route. Here they are selected and carefully broken up. Fermentation then takes place in stainless steel tanks and small wood at controlled temperatures. The vinification is followed by a maturation of 12 months in oak barrels.
