Vinification of the Mainova Mainova Branco The basis for the first-class and wonderfully elegant cuvée Mainova Branco from Mainova are Antao Vaz, Arinto and Verdelho grapes. After the hand harvest, the grapes arrive quickly at the winery. Here they are selected and carefully broken up. This is followed by fermentation in small wood at controlled temperatures. After the completion of fermentation, the Mainova Branco is aged for several months in oak barrels. It is perfect as an accompaniment to spaghetti with yogurt-mint pesto, spaghetti with caper-tomato sauce or roasted trout with ginger pear.
