Vinification of the Soluna Malvasia Collio DOC from Livon The Malvasia grapes for this special white wine grow in Ruttars in the municipality of Dolegna del Collio, the grapes are harvested exclusively by hand and placed in small boxes, They are then left to dry for 10 days under the sun and moon, hence the name Soluna , after which they are cold-macerated in a horizontal press for eight hours. The must is then clarified by natural decantation. The subsequent fermentation takes place entirely in stainless steel tanks at a controlled temperature of 16°C. After alcoholic fermentation, the wine remains in the same vats for around six months to mature at a constant temperature.
