For this wine, Cathérine tries to promote elegance and fruit through particularly careful vineyard work. The goal is ripe grapes without too much sugar and therefore less alcohol. Unripe berries are sorted out and the grapes are washed in fresh must. The still young wine is dense and concentrated, the tannins are fine-grained and almost creamy on the palate. Inviting dark berry fruit evokes memories of blackberries and elderberries.
