It is of great interest to the winery as it has developed considerable potential in Sicily and has thus become the expression of a Sicilian terroir variant of this grape variety. For this Syrah, the grapes are grown in the vineyards of Monreale, traditionally pressed in red, at controlled temperature and on the skins, malolactic fermentation is completed. Subsequently, 30% of the wine is aged for 12 months in small French oak barrels from Alliers and Troncais in second and third use, the other 70% matures in stainless steel tanks. After bottling, the wine rests in the bottle for a few weeks to harmonize.
