In this process, a portion of the must is drawn from the fermentation tank containing the red wine mash after a few hours or days without pressing. This portion is further fermented into a rosé wine. It then matures partially in large oak barrels, where it also undergoes malolactic fermentation. This enhances its light-footed, creamy texture. The nose is intense with red currant and a hint of mint. The palate is characterized by the finest perlage, incredibly juicy and fruity, with a wonderfully playful acidity that practically dances on the tongue. The perfect seduction.
