The grapes grow in optimal conditions in Languedoc-Roussillon. The vines here dig their roots deep into soils of clay and limestone. After the harvest, the grapes are quickly brought to the winery. Here they are sorted and gently broken up. The fermentation of the base wines follows. After the cuvée is assembled, further aging follows based on the Charmat method. Subsequently, the Oddbird Rosé sparkling wine matures for 12 months on the full lees. After the wine is finished, the Rosé sparkling wine is carefully dealcoholized.
