On the nose, the Contadi Castaldi Rosé delights with distinct aromas of wild berries, fresh rose petals, hints of apple, and tropical fruits. On the palate, this Italian sparkling rosé is structured, full-bodied, clear, and lively, with a beautiful flavor cadence. The finish is long-lasting and delicately balanced. Vinification of the Rosé Franciacorta DOCG from Contadi Castaldi For this Franciacorta Rosé, 65% Chardonnay and 35% Spätburgunder are vinified together. The grapes grow in a microclimatically favorable location, on gravelly soils that are not too limestone-rich, optimally permeable, with favorable airflow and sunlight exposure. The harvest takes place at the end of August and beginning of September. Before gentle pressing, the grapes are macerated at 17 to 18°C for 3 to 4 hours. After static cold decanting, the alcoholic fermentation follows in stainless steel tanks with selected yeasts over a period of 20 days. Subsequently, a partial malolactic fermentation occurs. The wine's initial maturation lasts for 7 months, partly in stainless steel and partly in barrique, after which the wine is bottled for secondary fermentation on the fine lees, which lasts between 24 and 30 months. After disgorgement, the sparkling wine rests in the bottle for an additional 3 to 4 months before release. An original, modern Franciacorta achieved through the skillful use of Spätburgunder grapes.
