Vinification of San Marzano Collezione Cinquanta Vino Rosso d'Italia For this impressive Southern Italian red wine, typical native grape varieties from the Salento wine region in Apulia are co-fermented. The vines are all at least 50 years old, growing on skeleton-rich, not very deep, medium-heavy clay-lime soils, in summer with partly quite warm climate periods with high humidity loss, at about 100m above sea level. The grapes are manually harvested in September when they have already reached slight over-ripeness. After destemming and cold maceration before fermentation, alcoholic fermentation follows, along with gentle pressing and wine extraction. Malolactic fermentation and subsequent maturation over approximately 12 months take place in barrels made of high-quality French oak. This red wine is characterized by its ability to maintain its organoleptic properties, bouquet, and flavor unchanged for 7 years.
