
Pedro Ximénez Vino Dulce Natural 0,5 l - Emilio HidalgoThe Pedro Ximénez Vino Dulce Natural by Emilio Hidalgo is a noble sweet sherry and presents itself in the glass in a dark mahogany with golden highlights. The expressive bouquet is carried by fruity aromas of dried fruits (apricots) and floral hints. On the palate, this sherry is wonderfully concentrated, revealing intense aromas of raisins. The oily texture promises a fascinating drinking experience when drunk neat. Vinification of the Emilio Hidalgo Pedro Ximénez The hand-picked grapes are destemmed, gently pressed and the resulting must is fermented in stainless steel tanks under temperature control. The young wine is then drawn off, fortified and placed in American oak barrels for aging. After aging without yeast, the wine is transferred to the traditional solera system, in which sherries of the same type are aged in barrels placed one above the other. The oldest wines are stored in the lower barrels (solera), while the youngest wines are stored in the upper rows (criaderas). The sherry intended for sale is always taken from the lower barrels. However, only a small part (maximum one third) is taken and the removed part is then filled up with sherry from the upper rows. The whole principle is continued until the topmost barrels, where young wine, musto, is added to the sherry. The oloroso, produced under oxidative influence, is then blended with a naturally sweet wine.
