It contributes intense fruit, fine spice and the elegant rose aroma that gives the wine its name and style. The grapes are harvested when ripe but not overripe, so that freshness and sweetness are in balance. Selective harvesting increases the finesse of the base wines. The harvested fruit is brought quickly to the winery so that the grapes retain their clear aroma. Gentle pressing yields a clean must with a delicate rosé color and fragrant aromatics.
