The soils are well drained and rich in minerals. The climate is warm, with plenty of sunshine but also cool nights. In this way, the berries ripen slowly and develop abundant aroma. Harvesting is usually selective so that only ripe grapes reach the cellar. The vineyards are tended with great care. Yield reduction ensures concentrated fruit and a clear profile. Canopy management, targeted soil cultivation and the selection of ripe grapes safeguard high quality. Corvina contributes typical notes of cherry, berries and fine spice. Merlot adds supple fruit and velvety tannin. This combination is ideal for an elegant red wine cuvée from Veneto. After the harvest, the grapes are carefully sorted in the cellar. Only ripe berries are processed. Fermentation on the skins takes place under temperature control so that the aromatic profile can unfold finely. The fermentation temperature remains moderate in order to preserve freshness and fruit. Regular remontage or gentle punching down of the cap ensures harmonious extraction of colour, tannin and flavour. After fermentation, the wine continues to mature on the fine lees. This step lends fullness, structure and a pleasantly creamy texture. Part of the wine is often matured in wooden casks. In this way, fine notes of vanilla, toast and a touch of cocoa develop without overshadowing the fruit. Maturation in wood is finely tuned so that the character of Corvina and Merlot clearly remains in the foreground. In the end, the cuvée from the various lots is composed with great care. Before bottling, Costalago Rosso IGT - Zeni rests further in tank or cask. This allows the overall picture to settle. The tannins become rounder and the aromas meld harmoniously.
