In spring, the wine is bottled for the prise de mousse, starting the second fermentation in the bottle according to the classic method. Aging on the lees for at least 24 months ensures complexity and depth in the aromatic profile.It presents itself with a brilliant pale pink color, enriched by a persistent mousse.
