Valles Calchaquìes Syrah Reserve of the Don David line by Michel Torino - El Esteco was born in vineyards located in the Calchaquíes Valleys, in the wine-growing region of Cafayate, within the Argentine province of Salta. It is produced exclusively with Syrah grapes, harvested and selected entirely by hand between the end of February and the first week of March. After partial cold maceration of the bunches, fermentation takes place in stainless steel tanks at a controlled temperature of 26-28 ° C. Subsequently the wine ages for 12 months mostly in American oak barriques and the rest in stainless steel, before being bottled. It has a lively ruby red color with violet reflections. The nose opens with intense aromas of spices and cassis characteristic of the variety, enriched with delicate notes of vanilla brought by the passage in barrique. On the palate it is fruity and concentrated, with sweet tannins that accompany a pleasantly vanilla and refreshing finish. Perfect to accompany savory and grilled red meat first courses, it is ideal in combination with aged cheeses.
