Aurorum by Can Axartell is a rosé wine of great character produced in the Terra Mallorca area, made from Merlot grapes. It has a pale salmon pink color with orange highlights, clear and brilliant, characterized by dense and slow tears that indicate its structure and intensity.The grapes are hand-harvested and processed using a gravity method. Fermentation takes place in stainless steel tanks, followed by a six-month aging period in French oak barrels, enhancing its aromatic profile and elevating its gustatory complexity.On the nose, it is distinguished by a pronounced aromatic expression, dominated by red currant, fresh cherry, red plum, and stone fruits such as apricot. There are also light notes of Mediterranean scrub and herbaceous hints of thyme and rosemary. On the palate, it is a gastronomic wine, serious and medium-bodied, with vibrant and balanced acidity, energetic and oily closure, and a long and complex finish where fruity notes harmoniously blend with vegetal ones.It pairs perfectly with flavorful dishes based on fish, white meats, cheeses, and cured meats, enhancing even complex preparations thanks to its structure.
