Vinification for the Kalterersee Classico Superiore from Ritterhof The vines for this South Tyrolean red wine, some of which are over 50 years old, are rooted in sandy gravel and moraine soils in Kaltern, above Lake Kaltern. The grapes are harvested by hand at optimum ripeness, lightly crushed and destemmed and then fermented at a constant 22° Celsius. The wine is matured and aged for 6 months in large wooden barrels.
