Here, the vines sink their roots deep into sandstone soils. After harvesting, the grapes are quickly brought to the press house. There they are sorted and gently crushed. Fermentation then takes place in small wooden barrels at controlled temperatures. Following fermentation, the wine matures for several months on the fine lees before it is finally bottled.
