Sabaudo Barolo DOCG Riserva 0,75 ℓBarolo Riserva di Sabaudo is a red wine produced exclusively with Nebbiolo grapes from 11 municipalities in the Barolo area. This wine represents a classic and refined interpretation of the Barolo denomination, with an elegant structure and a sumptuous character. The label depicts Vittorio Emanuele II, protagonist, with Cavour and Garibaldi, of the national unification and first king of Italy from 1861 to 1878. The vinification involves a pressing and destemming followed by fermentation in stainless steel with temperature control at 28°-30°C. The maceration of the skins lasts 12 days with daily pumping over. Subsequently, the malolactic fermentation takes place entirely. The minimum aging is 62 months, of which at least 18 in wooden barrels. On the nose, this wine offers a bouquet rich in spices and hints of licorice. On the palate, it is long and persistent, with a full and velvety structure. The tannins are rich and well integrated, giving the wine an elegant and complex sensation. This Barolo Riserva pairs perfectly with hare, wild boar, braised beef, roast and grilled meats, as well as strong cheeses.
