Cappello di Prete is a Negroamaro produced by the historic Candido winery, an authentic expression of the Salento territory. Made from 100% Negroamaro grapes, it represents a red wine with great personality, able to combine tradition and refinement in an intense and structured style.Vinification involves a long maceration of destemmed grapes in stainless steel, in order to extract color and noble components from the skins. After malolactic fermentation, the wine matures in barrique, where it develops its aromatic complexity and achieves a perfect balance between fruit and wood.It shows a deep ruby red color enhanced by purple reflections. On the nose it expresses an intense aroma with elegant spicy notes and delicate hints of vanilla. On the palate it is structured, full and velvety, with an enveloping tannic texture that gives harmony and persistence.It pairs wonderfully with roasted red meats, braised dishes, game, and aged cheeses.
