The Nebbiolo Red Label is produced by Ca’ del Baio from a selection of grapes sourced from different vineyards. It is a fresh and immediate wine, which best expresses the typical characteristics of Nebbiolo grown in younger vineyards, offering great drinkability and an authentic character linked to local tradition.The winemaking process includes a short maceration followed by alcoholic fermentation, both conducted in stainless steel tanks at controlled temperatures. The wine is then left to rest in the same containers for about 4 months before bottling, maintaining its original freshness and fragrance.In the glass, it presents a garnet red color crossed with ruby hues. The aroma is fragrant and reminiscent of dried flowers, with a distinct scent of geranium and light fruity hints recalling raspberry. On the palate, it is dry, warm, and smooth, with a slight tannicity that completes its structure, offering a harmonious and flowing sip.It is particularly suitable for pairing with fresh cured meats, lightly aged cheeses, pasta with ragù, and simple red meats such as hamburgers or beef carpaccio.
