Vinification of Abadal Blanco by Abadal This elegant white wine from Spain is made from the grape varieties Chardonnay, Macabeo, Piquepoul Blanc and Sauvignon Blanc. At optimal ripeness, the grapes for Abadal Blanco are harvested exclusively by hand, without the use of coarse and less selective mechanical harvesters. After harvesting, the grapes are immediately taken to the press house. There they are sorted and gently crushed. Fermentation then takes place in stainless steel tanks at controlled temperatures. Vinification is followed by maturation on the fine lees for several months before the wine is finally drawn off.
