Production of Kai Carménère by Viña Errazuriz The grapes for Kai Carménère - Viña Errazuriz come from selected plots in the Maipo Valley, one of Chile’s most renowned red wine regions. Here Andean air meets Pacific breezes. The days bring intense sunshine, while the nights cool down considerably. This tension produces ripe aromas, stable structure and clear contours in the wine. The soils of gravel, clay and sand drain off excess water well and force the vines to develop deep roots. In this terroir, the Carmenère grape delivers dense, aromatic grapes with dark colour and typical spiciness. Viña Errazuriz places great value on low yields. Harvesting is selective, often in several passes, in order to pick only perfectly ripe berries. The harvest takes place in the early morning hours so that the grapes arrive cool at the winery and retain their aromatic freshness. At the winery, a further manual selection follows before the berries are gently destemmed and lightly crushed into the fermentation vessels. A short cold maceration before fermentation releases fine aromas and colour from the grape skins. Fermentation is temperature-controlled so that the fruit remains clear and precise. Regular punching down of the cap brings intense colour, structure and depth to the young wine. After fermentation, an extended maceration on the skins allows the tannins to mature and shapes the dense, fleshy mouthfeel.
