The grapes are harvested manually. After destemming and gentle pressing, maceration and fermentation take place at a controlled temperature for 10 to 12 days. The wine is then aged for 12 months in French and American barriques, 20% of which are new. After bottling, the Syrah matures for a further 3 years in the bottle before being released for sale.
