Pemberton is one of the sub-regions of the Great South, and with a climate similar to Margaret River, it benefits from a rather cool and balanced climate. This wine is made exclusively from grapes of the Dijon clone. After whole-cluster pressing, spontaneous fermentation takes place in cement tanks and older, large wooden casks. The wine is then aged for eight months in French oak barrels on the fine lees, a mix of new and used.
