Production of the Sanct Valentin Pinot Grigio DOC from Kellerei St. Michael Eppan The grapes for this Pinot Grigio come from selected vineyards of the DOC Alto Adige Südtirol. The sites lie at medium to higher altitudes, characterized by cool nights and ample sunshine during the day. This range in daily temperatures ensures intense aromas, fine acidity and clear structure. The soils consist of limestone, dolomite rock, gravel and partly sandy sections. Limestone-rich parcels bring tension, minerality and longevity. Warm, gravelly areas provide richness and ripe fruit. Kellerei St. Michael Eppan deliberately selects parcels that give the Pinot Grigio both power and elegance. The harvest is selective. Ripe grapes are brought quickly to the cellar in small containers to preserve freshness and aromatics. In particularly valuable parcels, the team sorts again by hand. This way, only perfectly ripened and aromatic berries proceed to further processing. In the cellar, the whole clusters or destemmed berries are first gently pressed. Depending on the vintage, the must is left on the skins briefly to gain more aroma and structure. The must then flows into temperature-controlled stainless steel tanks and partly into wood. Cool fermentation preserves the fine fruit and floral notes. A portion of the wine matures in large wooden casks or barriques. There it develops the creamy texture and the typical vanilla and nut nuances. The rest remains in stainless steel tanks to emphasize freshness and clarity.
