Here, warm days meet cool nights. The vineyards lie on the slopes above the Adige River, crisscrossed by downslope winds from the mountains. Limestone and slate form the subsoil, offering the vines few nutrients but plenty of character. Pinot Noir, traditionally called Blauburgunder in South Tyrol, reacts sensitively to climate and soil. In this region, the variety shows very clear red fruit and precise acidity. On barren sites the vines root particularly deep into the soil. This creates the typical cool minerality in the wine. The harvest is selective and carried out at the ideal moment of ripeness. This way, the natural acidity remains vibrant while the aromas can fully develop. Only fully ripe grapes make it into the cellar. The berries are transported quickly and gently for processing in order to avoid oxidation and preserve the delicate Pinot structure. In the cellar, Josmoarhof relies on gentle vinification. After careful destemming, the grapes are transferred into fermentation vessels where they undergo a cool pre-fermentation maceration. The wine is matured predominantly in stainless steel tanks and possibly in large, neutral wooden casks.
