If you give it a little air by swirling it in the wine glass, you can perceive a perfect balance in this white wine, as it does not appear watery nor syrupy or liqueur-like on the sides of the glass. In the glass, this white wine from Neil Ellis offers aromas of honeydew melon, complemented by nectarine, lime and mineral notes. This South African wine delights with its elegantly dry flavor profile. It was bottled with only 2.1 grams of residual sugar. As you would expect from a premium and single-vineyard wine, this South African, despite all its dryness, enchants with the finest balance. Aroma does not necessarily need a lot of sugar. Vinification of the Whitewall Chardonnay from Neil Ellis The basis for the balanced Whitewall Chardonnay from the Western Cape is grapes from the Chardonnay variety. In the Western Cape, the vines that produce the grapes for this wine grow on sandstone and clay soils. After being hand-harvested, the grapes are quickly brought to the winery. There they are sorted and gently crushed. Fermentation then takes place in small wooden barrels at controlled temperatures. After fermentation, the wine is aged for 9 months in French oak barrels. It is perfectly suited as an accompanying wine to coconut-lime fish curry, chickpea curry or fruity endive salad.
