Production of Néomad Madiran by Plaimont The grapes come from the Madiran appellation in southwestern France, near the foothills of the Pyrenees. Here, there is an exciting interplay of Atlantic influence and continental warmth. Days of intense sunshine meet cool nights, which gives the Tannat grape intense aromas and stable structure. The soils often consist of gravel, clay and limestone, with good drainage and deep rooting, ideal for concentrated berries with thick skins. The star grape variety of this wine is Tannat, vinified as a single variety. Tannat brings lots of color, firm tannins and dark aromatics that perfectly match the powerful Madiran style. The grapes ripen late, accumulate plenty of sun and thus develop their intense plum and berry profile. At the same time, the climate preserves enough freshness so that the wine’s acidity remains lively and supports the wine. The harvest is generally selective in order to bring only fully ripe berries into the cellar. Targeted harvest timing produces grapes with an optimal ratio of sugar, acidity and phenolic ripeness.
