Vinification of the Klein Constantia Vin de Constance This dessert wine clearly focuses on one grape variety, namely Gelber Muskateller. For this exceptionally powerful varietal wine from Klein Constantia, only the best grapes were harvested. After harvesting, the grapes are immediately taken to the winery. Here they are sorted and carefully crushed. Then fermentation takes place in stainless steel tanks at controlled temperatures. After the end of fermentation, this sweet wine is aged for 3 years in barrels - a combination of new French and Hungarian oak barrels, and French acacia barrels. This is followed by 6 months in steel tanks before this dessert wine is bottled.
