Vinification of the Boschendal Elgin Sauvignon Blanc The basis for the balanced Elgin Sauvignon Blanc from the Western Cape is grapes from the Sauvignon Blanc variety. A very strong influence on the ripening of the harvested fruit is also exerted by the fact that the Sauvignon Blanc grapes thrive under the influence of a warm climate. This is reflected, among other things, in particularly well-ripened grapes and a rather high alcohol content in the wine. After hand-picking, the grapes are immediately taken to the press house. There they are sorted and gently broken up. This is followed by fermentation in stainless steel tanks at controlled temperatures. After the end of fermentation, the Elgin Sauvignon Blanc can continue to harmonize on the fine lees for a few months.
