The finish of this youthful red wine from the Valle Central winegrowing region, more precisely from Valle de Rapel, finally thrills with a remarkable aftertaste. Vinification of Montes Montes Alpha Carmenère The basis for the powerful Montes Alpha Carmenère from Valle Central are grapes from the Cabernet Sauvignon and Carmenère varieties. At optimal ripeness, the grapes for Montes Alpha Carmenère are harvested exclusively by hand, without the use of crude, less selective machinery. After hand-picking, the grapes are quickly brought to the press house. There they are sorted and gently crushed. Fermentation then takes place in small oak barrels at controlled temperatures. After fermentation is complete, Montes Alpha Carmenère is aged for another 12 months in French oak barriques. Food recommendation for Montes Montes Alpha Carmenère This Chilean red wine is best enjoyed at a temperate 15 - 18°C. It is a perfect pairing with vegetable couscous with beef meatballs, braised chicken in red wine, or Boeuf Bourguignon.
