Vinification of the Les Jamelles Sauvignon Blanc The vines grow in the department of Gard, Hérault plain, Aude valley on calcareous soils. Already in the early morning hours, the Sauvignon Blanc grapes are harvested and immediately brought to the wine cellar of Les Jamelles. There, after a cold maceration of 8 hours, the grapes are gently pressed. The must is then fermented at low temperature in stainless steel tanks. Finally, this wine ages for a few months on fine lees in a carbon dioxide atmosphere.
