The background to this is that it was necessary to prove that the winery actually produced Barolo before the DOCG was established. For this Barolo, the best and healthiest Nebbiolo grapes, which grow on the vineyards on the hillsides of the Barolo production area, are selectively harvested by hand and macerated with the skins. During this process, the skins are repeatedly and gently lifted. The wine is then aged for 36 months in large French oak barrels.
