Structure and mouthfeel: medium-dry, velvety, well-balanced, with ripe tannins that feel soft yet provide support. The freshness carries the dark fruit, the finish is long and leaves an elegant trace of spices. In the mouth, the wine shows a harmonious composition of soft richness and clear structure. The cuvée of Cabernet Sauvignon, Merlot and Syrah provides dense fruit, gentle tannin and spicy accents. Sunny days and cool nights ensure ripe berries with intense color and dense aromatics. The soils are partly volcanic, partly loamy with a share of limestone. This promotes structure, spice and a fine, natural freshness in the wine. In the vineyard, close attention is paid to yield and foliage. The goal is good ventilation of the grapes and a targeted reduction in yields so that each berry develops more aroma and power. The grape varieties Cabernet Sauvignon, Merlot and Syrah are tended separately in order to emphasize their typical strengths. Harvesting is usually selective and carried out in several passes so that only ripe grapes reach the cellar. After harvesting, the grapes are quickly brought to the winery. There they are destemmed and gently crushed. Fermentation on the skins takes place under temperature control. This keeps aroma, fruit and color precisely preserved.
