Vinification of the TWR Sauvignon Blanc This balanced white wine from New Zealand is vinified from the Sauvignon Blanc grape variety. The grapes grow under optimal conditions on New Zealand’s South Island. Here, the vines drive their roots deep into clay and gravel soils. At optimal ripeness, the grapes for the Sauvignon Blanc are harvested exclusively by hand, without the aid of strenuous and barely selective mechanical harvesters. After picking, the grapes are quickly brought to the press house, where they are sorted and gently crushed. Fermentation then takes place in stainless steel tanks and small wooden barrels at controlled temperatures. After fermentation is complete, the elegant Sauvignon Blanc is aged for a few more months in French oak barrels.
