Vinification of Ja-To by Vignato Virgilio The basis for the first-class and wonderfully powerful Ja-To cuvée from Vignato Virgilio is Cabernet Sauvignon and Merlot grapes. The grapes grow under optimal conditions in Veneto. Here, the vines sink their roots deep into clay soils. After the harvest, the grapes are quickly brought to the winery. There they are sorted and gently crushed. Fermentation in stainless steel tanks and small wooden barrels follows at controlled temperatures. After fermentation is complete, Ja-To can continue to harmonize on the fine lees for 12 months. Food recommendation for Ja-To by Vignato Virgilio This Italian red wine is best enjoyed at a temperature of 15–18°C. It pairs perfectly as an accompaniment to duck breast with sugar snap peas, boeuf bourguignon, or lamb ragout with chickpeas and dried figs.
