On the finish, this wine from the Lazio wine-growing region delights with wonderful length. Once again, hints of dried apricot appear. In the aftertaste, mineral notes from the volcanic stone–dominated soils are added. Vinification of Muffo Grechetto by Sergio Mottura This dessert wine clearly focuses on a single grape variety, namely Grechetto. For this wonderfully balanced varietal wine from Sergio Mottura, only first-class grapes were harvested. In Lazio, the vines that produce the grapes for this wine grow on volcanic stone soils. After the grape harvest, the grapes are quickly brought to the winery. There they are selected and gently crushed. Fermentation in stainless steel tanks and small wooden barrels at controlled temperatures follows. After fermentation, the wine is aged for several months on the fine lees before it is finally drawn off.
