Vinification of Weingut Schmitges Edition Rot The basis for the balanced Edition Rot from Germany is grapes from the Dornfelder and Pinot Noir varieties. After the grape harvest, the grapes are brought to the winery as quickly as possible. There they are selected and gently crushed. This is followed by fermentation in small wooden barrels at controlled temperatures. After it has finished, the vegan Edition Rot is aged for a few more months in oak barrels.
