This wine from Piedmont finishes with a wonderful length. Vinification of the Borgogno Barolo list The grapes for this outstanding red wine grow in the single vineyard Liste in the DOCG Barolo area. This vineyard covers around 6.75 hectares and is south-facing at an altitude of 270 to 330 meters above sea level. After the grapes are harvested, the grapes are first fermented spontaneously for 12 days in concrete vats in the Giacomo Borgogno & Figli wine cellar. This is followed by a maceration period of 40 to 60 days at a constant temperature of 29 degrees Celsius. This red wine undergoes malolactic fermentation at 22 degrees Celsius for around 15 days. After the fermentation process is complete, this wine matures for a total of 4 years in large wooden barrels made from Slavonian oak (volume 4500 liters) and then rounds off for a further 6 months in the bottle.
