Vinification for the Nostre Pais Blanc AOP Costières de Nîmes from Vignobles Michel Gassier This cuvée comes from certified organic farming and is made from Granache Blanc, Roussanne, Clairette, Viognier and Bourboulenc grapes. The vines for it come from selected plots with old vines and small yields. The grapes are harvested by hand, selected and pressed without oxygen to preserve the acidity. This is followed by fermentation and aging on the lees for 8 months.
