The grape varieties used for this red wine are Tempranillo (60%), Garnacha Tinta (30%) and Cabernet Sauvignon (10%). The bouquet combines fruity aromas of dark berries (blackberry, blackcurrant, blueberry) with spicy hints of sweet pepper tobacco, vanilla and cinnamon. The fruity-spicy aromas continue on the enormously elegant, velvety-soft and full palate. Despite the long barrel aging, this red wine has a nice incisive acid structure. The name Monte Ducay comes from the vineyard located in the immediate vicinity of the winery. The word Pergamino derives from the German term Pergament and is intended to draw attention to the paper that wraps the bottle. Vinification of Monte Ducay Gran Reserva Pergamino Tinto The grapes harvested by hand at Bodegas San Valero are first destemmed, crushed and the resulting must is fermented in stainless steel tanks under temperature control. After completion of fermentation, this wine is first aged for 18 months in American oak barrels before finally rounding out for another 24 months in bottle.
