Vinification of Peter Mertes Maybach Chardonnay The basis for the elegant Maybach Chardonnay from Germany is grapes of the Chardonnay variety. After hand-picking, the grapes are brought to the press house as quickly as possible. There they are sorted and gently crushed. This is followed by fermentation in stainless steel tanks at controlled temperatures. Vinification is followed by maturation for several months on the fine lees before the wine is finally drawn off. After the wine has been completed, the Maybach Chardonnay is gently harmonized.
