Vinification of the Moscato from Yellow Tail The basis for the elegant Moscato from South Australia is grapes of the Moscatel variety. After the grape harvest, the grapes are brought to the press house immediately. There they are sorted and gently broken up. This is followed by fermentation in stainless steel tanks at controlled temperatures. After fermentation, the wine is aged for several months on the fine lees before it is finally bottled.
