Brunello di Montalcino is an Old World wine in the best sense of the term, as this Italian exudes an exceptional European charm that clearly underscores the success of wines from the Old World. At optimal ripeness, the grapes for Brunello di Montalcino are harvested exclusively by hand, without the use of rough, low-selectivity machinery. After the harvest, the grapes are immediately brought to the press house. There, they are sorted and gently crushed. Fermentation in large wooden casks at controlled temperatures follows. After fermentation is complete, the powerful Brunello di Montalcino is aged for another 30 months in large Slavonian oak casks.
