The grapes grow under optimal conditions in Trentino-Alto Adige. Here, the vines drive their roots deep into soils of loam, sand and clay. When perfectly ripe, the grapes for the Kalk Chardonnay Alto Adige are harvested exclusively by hand, without the help of coarse, less selective mechanical harvesters. After the harvest, the grapes are brought to the winery as quickly as possible. There they are selected and gently crushed. Fermentation then takes place in stainless steel tanks at controlled temperatures. After the end of fermentation, the Kalk Chardonnay Alto Adige can continue to harmonize for a few months on the fine lees.
