For this wonderfully powerful varietal wine from Gerard Bertrand, only immaculate grapes were used. Domaine de l'Aigle Pinot Noir is an Old World wine through and through, as this French wine exudes an exceptional European charm that clearly underscores the success of Old World wines. A very strong influence on the ripeness of the grapes is also exerted by the fact that the Pinot Noir grapes thrive under the influence of a warm climate. This is expressed, among other things, in particularly well-ripened grapes and a rather high alcohol content in the wine. After harvesting, the grapes are brought to the press house as quickly as possible. There they are sorted and gently crushed. This is followed by fermentation in large wooden vats at controlled temperatures. After fermentation, the wine is aged for several months in French oak barrels.
