After a selective hand-picking during the cool night, spontaneous fermentation takes place in 300-liter oak barrels. The wine then ages on its lees for nine months in a combination of first-, second-, and third-fill oak. This is a precise and expressive Sauvignon Blanc that displays pure fruit and a strong sense of its origins. The nose offers aromas of lime, kiwi, black currant, elderflower, and green papaya, underpinned by a distinctive flint minerality. The palate is lively, with a thrilling balance between zesty acidity and a structured mid-palate. The wine is fresh, concentrated, and complex, with a long, saline finish.
