Revì Re di Revì Trento DOC Riserva Extra Brut 0,75 ℓ, In Holzkiste

The Re di Reví is an Extra Brut sparkling wine produced in Trentino. This prestigious wine, made in just 1500 bottles, represents the most important reserve of Casa Reví. It is obtained from a cuvée of Chardonnay and Pinot Noir. After soft pressing, the must is separated from the stalks and pomace, clarified and left to ferment at a controlled temperature. The sparkling wine production takes place with a refermentation in the bottle according to the Classic Method. After a long stay on the yeasts of 107 months, the wine is disgorged in February. The wine has a brilliant golden yellow color, with a fine and persistent perlage. On the nose it offers hints of ripe fruit (renette apples), slightly toasted and pleasantly bitter notes of dried fruit (carob), enveloping notes of turmeric and a finish of ripe bread crust. On the palate it is dry, balanced and harmonious, enveloping and pétillating, with well-supported freshness and flavor. It has a light bittering sensation, with a well-structured body and a long persistence. Perfect to enjoy alone or paired with refined fish and seafood dishes, fresh cheeses and light appetizers.
